Pre-book tickets ahead, as advised for a site this popular, and set aside a full day - the town of Stirling below is worth combining with the visit.
Stirling Castle draws consistently high praise, with the tapestries (and the exhibit on how they were re-created) mentioned repeatedly as a standout, along with knowledgeable, engaging tour guides. Reviewers recommend allowing a full day and wearing sturdy footwear given the cobbled areas and inclines. One reviewer notes that, while the buildings themselves are beautifully restored, the rooms contain relatively little in the way of furnishings compared to some other historic houses - worth bearing in mind if you're expecting a fully dressed interior.
